01:GREENGRAM PAYASAM

Ingredients
Green gram dal - 1 cup Water - 4 cups Sugar - 1 cup Milk - 3 to 4 cups Ghee - 2 to 3 tbsp Few cashewnuts and raisins H4 Cardamons - 3

Method
1. Fry the greengram dal in a thick vessel on a low heat without changing the color of the dal. 2. Bring to boil 4 cups of water, add the dal and cook until soft. 3. Make a syrup of sugar adding little water. 4. Pour this into cooked dal and stir until dal is mixed well. 5. Pour the milk slowly and gradually into this stirring continuously so that it does not curdle. (Use the milk according to the way you like your payasam that is thick or thin). 6. Remove from stove and add the fried cashews and raisins. Also add the cardamon powder. 7. Go on stirring atleast 3 to 4 min after you add dried fruits so that the payasam does not curdle. 8. This can be served warm or cold.


02:Corn And Paneer Salad

Ingredients:
1 cup sweet corn kernels
1 cup paneer, cubed
1 onion, chopped
2 green chilies, chopped finely
1/4 tsp. turmeric powder
1/2 tsp. sugar
2 tbsp. chopped coriander
2 tbsp. Oil
Salt according to taste


Method:

1.Heat the oil and cook the onion and green chilies.
2.Add the sweet corn kernels, paneer, turmeric, sugar and some water.
3.Heat till the corn kernels get cooked and then add the coriander.
4.Remove from the heat and keep aside. Serve hot.


03:HUSSANI QORMA


2 KG MUTTON LEG PIECES
1 KG YOGHURT
SALT TO TASTE
1 CUP ROASTED POPPYSEED PASTE
2 TBSP GARLIC PASTE
2 TBSP GINGER PASTE
1 CUP PASTE OF LIGHT GOLDEN FRIED ONIONS
1 CUP SPLIT,BLANCHED ALMONDS
1 CUP BUTTER

Mix all ingredients well.Leave to marinade for 2hours.Cook on slow fire till butter comes on top.Stir well till the smell of masala vanishes.Keep adding a little water so that so that the mixture does not get burnt.Add a cup and a half of water,stir and allow to cook for half an hour on slow fire.Serve hot with naans or parathas.


04:Jaipuri Mewa Pulao
 


Serving: 6
Preparation time: 90 mins

Ingredients:
Long grained white rice: 2 cups
Sugar: 2 cups
habib banaspati Ghee: 1 cup
Chironji: l/2 cup
Almonds: 25
Pistachios: 25
Cardamom powder: 1 tsp
Nutmeg powder: 1/4 tsp
Saffron: 1/2 tsp
Milk: 4 cups

The Steps:
Pre - Preparation :
1) Coarsely chop the chironji and blanch and chop the almonds.
2) Chop the pistachios and soak the saffron in 1 tsp milk.

Preparation :
1) Soak rice in water for 2 hrs and drain.
2) Heat ghee and add drained rice.
3) Add milk and cover and cook on a low fire stirring occasionally but
gently so that the rice grains do not break.
4) As soon as the rice is cooked, add the cardamom and nutmeg powders,
dry fruits, sugar and saffron. Mix well.
5) Bake in a moderately hot oven till each grain is separate.
6) Serve hot as a sweet dish.

Calories: 825 per serving

Left - Over Ideas :
Mash the rice, add some more milk and condensed milk and serve it as kheer.


05:FLAVOURED LASSI


(per glass)
1/4 glass yoghurt
1/4 glass water
1/4 glass mango pulp
1 tsp sugar
a pinch salt
a pinch pepper
3 ice cubes
mint leaves

Blend the above ingredients except the mint leaves.Pour in a tall glass.Decorate with a slice of twisted lemon and a sprig of mint.

note:For 20 glasses,have 5 cups each of yoghurt,water, mango pulp,1-1/2 to 2 cups sugar,1 tsp salt,pepper,5 trays of ice cubes.


06:MANGO ICE CREAM


10 CUPS MANGO PULP
2 CUP FINE SUGAR
5 CUPS MILK PAK
5 CUPS CREAM

Blend all the ingredients well.Freeze.When set halfway,beat or blend the ice cream in batches and freeze again.You may use thre ice cream maker.
Serve in a cup with a swirl of cream and caramalized nuts.


07:Scalloped Chicken



Scalloped Chicken

Cooking time: As Required

Serves : 4-6

Ingredients :
1 package (7 ounces) shell macaroni, uncooked
2 cups milk
1 can (10-3/4 ounces) of celery soup
1 can (10-3/4 ounces) of mushroom soup
1 can (8 ounces) mushrooms
1/2 pound American cheese, grated
3 cups cooked white chicken meat
Small onion, chopped
1/2 cup celery, chopped
1/2 teaspoon salt
Packaged croutons

Method :

1-Mix all ingredients except croutons in large casserole. Set in refrigerator over night.
2-Stir once or twice. Top with croutons. Bake with lid on at 350 degrees 1 hour.


08:carrot halwa
 


3 kg carrots finely grated
1 cup desi ghee
2 1/2 cups sugar
1 kg khoya
1 cup blanched split almond
1 cup chopped pistachios
1 cup raisins
1 tsp powdered green cardamom
silver foils

method:
Heat ghee in a large wok or pan.Fry carrots till the water evaporates.Add sugar and cook.Add khoya and blend well.Add nuts and cardamom powder.Remove from heat.Serve in a large dish ,spread silver foils.Serve with extra cream.

note:
Don't overcook.You may also serve halwa as layers or halwa in pattis,available at nimko(cook these on a tawa or a griddle lighty)spread in a baking dish.Spread halwa and chopped nuts sprinkled all over .Bake for 30 minutes in a moderate oven(dam).Cut in a diamond shape or squares.


09:DAHI KI ROTI



2 to 4 cups flour
1/2 tsp salt
2 to 4 eggs
1/2 to 1 cup of sugar
1 cup butter or desi ghee
1 cup milk powder optional
Yogurt for kneading the flour

method:
Sift the flour with salt.Add eggs,sugar and desi ghee or butter.Mix well.Knead the flour with yogurt to soften the dough.Leave it for an hour to ferment.Make small rotis,a bit thick , the size of a saucer.Cook on a griddle on amedium flame.

Note: you may add some more ghee if you desire while cooking.


10:FISH BIRYANI


serving:6 to 8
preparation time:1 hr approxymaite



habib cooking oil 2 tbsp
rice 2 cups
Fish (sole) 11 pieces
Onions 2 medium size(cut in strips)
Potatoes 2 medium size chopped
Red chillie powder 1 tsp
salt to taste
Turmeric 1/2 tsp
cloves 3
pepper corns 6
cinnamon 1 piece
coconut powder 1 tsp or coconut
milk
1 cup pineapple slices
pineapple slices 4 cut into pieces
garlic and ginger paste 2 tsp
tomatoes 2
green chillies 2 to 3
method:
Heat the oil,fry the onions light brown.Fry the potatoes and take them out of the oil.Next fry the garlic and ginger paste and add the fish pieces.Fry for 2 minutes,add the turmeric,red chillies powder,pepper corns,cloves and salt and fry a little.Now add the coconut milk.Simmer on low heat till the water and oil seprate.Now place a layer of rice in the pot, and a little butter,coriander leaves and cut green chillies on it.Now put a layer of fish curry,then rice and another layer of fish,add in the pineapples in the end ,since the pineapples absorb too much of the fish,they are added in the end.After a delicious first course ,it is time for the sweet dish.
